I am sure this has been discussed many times over. Is there a guide or thread with instructions on how to map the controller to the different console games?

it would be done in each individual emulator. there is usually like an options tab or something similar. then there will be "controllers" or "inputs" or something like that. from there you should be able to set the controls by clicking on the button on screen and pressing a corresponding button on the 360 controller.
