8-line vs 16-line

Not sure where to ask this.
What is an 8-line game as opposed to a 16-line game.
All games I'm familiar with are 8-line and use an 8-line harness.  Do 16-line games use the same harness, cabs and monitors?
What does 8-line mean and why is it called "8-line" or "16-line"?
In theory, there is no difference between theory and practice, but in practice.....there is!!
