I would say you need to make some decisions:
What kind of joystick are you most familiar with? Bat or ball? Then narrow down what you want from there - restrictor type oif any ,4 or 8 way, etc. Same with buttons. Concave, convex, american, japanese? Figure out what you need and half of it is done. All the 3" trackballs I have used are excellent, and most distributors carry a similar range of options. So My advice would be to just pick your joys and buttons, and then from the same vendor check out the trackballs on their site. And after you add an encoder you are pretty much done! Don't for get coin buttons, start buttons, and have a plan on admin buttons like exit or pause, if any. I use key combinations to do most things - player one down and player one start to exit a game, and up on player two plus player two start to pause.
