You can play Robotron on a 2 player panel easily.  :P

Like the others before me it is all about asking the right questions up front, then you establish what you really want and then we can help you find it:

Do you want to build it yourself or are you looking to buy a finished product?

What games are you looking to play (this will dictate many things such as number of players, number of buttons, types of joysticks, orientation of monitor, type of monitor, etc)?  This list should be as specific as you can make it.

This will be a scratch build, that seems to be half the fun, if not more. I will play the classics (Space invaders, pac man, asteroids, galago, donkey kong) golden tee would be one of the newer games I'd play.  The boy and his friends will be more into the fighter games.  Probably going to be LCD mounted horizontally, big enough so the vertical games still are decent sized. More than likely it'll be 16:9 just due to availability.

I'd agree with the 2 player panel with 2 extra controllers.  Unless you plan on playing these types of games with the kids as well and want the arcade controls, but even that would get old, unless you found some other games to play as well, maybe from consoles or something.
