I started a similar thread a couple years ago (http://forum.arcadecontrols.com/index.php/topic,117769.msg1248157.html#msg1248157)
and my response was:

I think now I would say..
1. Keep the fancy linked Outrun 2 setup
2. Skee Ball! Some sort of multi-lane competitive setup
3. Sorcerer Pinball- Williams, 1985, and has all the cool stuff. Drop targets, extra flipper, spinners, multi-ball. Played one a while back and fell in love. But due to the general price and rarity of pinballs nowadays it is probably not going to happen.

I think my three would be:
1. Spy Hunter (stand-up)
2. Star Wars (cockpit)
3. Toobin' (just always loved the waterfall marquee)

The first two because they're really hard to recreate in a BYO project and were tons of fun. The last for just pure nostalgia classic-ness.
