I'm confused - is a 2 player coin button even necessary on a Mame machine, short of authenticity?

Yes.  Some games require specific credit slots for players.  i.e. Ninja Turtles, Gauntlet, etc.
Gauntlet for example:  If you put it in player 1 slot you will begin as the Warrior.

Ah well fair enough. Does that mean tho that you need player 3 and 4 for other characters? (My gauntlet knowledge is limited but aren't there 3 characters?)

4 characters - Warrior, Valkyrie, Wizard, and Elf (P1-P4, respectively)

The 2-player version (gauntlet2p) allows you to select which one you want to be -- 2 coin slots/buttons, start is player button 2 by default.

Well as long as I'm not losing out on characters in those other games!
