I don't know about MAME, and it's not a video, but the model 2 setup is explained in the sticky of this forum: http://forum.arcadecontrols.com/index.php/topic,131527.0.html . Check the attachment on the first post. You basically just set up networking so each PC knows the next PC's IP on your network -- they form a "ring" if you will.

MAME only networks with about 3 or 4 racing games, IIRC. Sega system32 and model1 stuff. So outrunners, F1 Super Lap, and Virtua Racing work. You need the game roms, and the m1comm.zip rom. Then you set up the IP's in mame.ini kinda the same way you would for model 2, each pointing to the next, the last pointing to the first. Not sure how many players F1lap allows, but VR is 8ppl, and i think orunners is only 2 (but two seats each, two screens, so you need to set numscreens 2 in mame.ini if you only want one on each monitor or only have one monitor.)

Once the above IP's are set right, you run each game and go into the service menu to set the links up, changing things like car numbers and master/slave setting, depending on the game in question. The games often need restarting once that's done, and you may need to hard crash to do that, believe it or not. FYI you can't use them single player without changing the options back in the service menu or just removing the NVRAM files and starting over. Or just setting up a second copy of MAME.

Off the top of my head, additionally to the ones you've mentioned, you can also link Rad Rally, Wing War and Virtua Formula. You can do a full 8 player set-up in F1 Super Lap and Outrunners, not sure about the others, but I imagine they are all 8p as well. You can also create a separate NVRAM folder in your MAME folder for the multiplayer stuff (and a separate CFG folder if you vary between wheels and joypads). If you launch MAME from a batch file just specify which folder to use in the batch file itself i.e. 'start /b mame64.exe orunners -w -cfg_directory cfg2 -nvram_directory nvram2'  And then it saves you having to have multiple version of MAME on your PC.
