I'm working on a small side project... a Supergun.
I'm kidn of confused on how to wire the video part though.
I need it to work with a variety of monitors, and with a computer LCD.
Everything else, I've got covered.

What would be a good one to go with?
I need something that can run multiple displays (just 1 at a time though).

Gonbes 8220 should do the trick, has dual RGB (VGA) out connections and you can always wire up a powered splitter if you require more connections.
