Each channel can be controlled independently to set the brightness like a light dimmer switch.
If you are using single color LED buttons, 20 buttons = 20 channels.
If you are using RGB (Red/Green/Blue) buttons, 20 buttons = 60 channels. (20 Red / 20 Green / 20 Blue)
An RGB button allows you to set a variety of colors by controlling the levels on the red, green, and blue channel you associate with that button -- picture the red, green, and blue pixels on a monitor combining to make different colors.
You can mix and match RGB and single color buttons on one controller IIRC.

You might want to check out this thread: RGB pushbutton showdown. It has a nice comparison of the various brands of LEDs/buttons.
FWIW, I don't think there's really a "best" brand. It largely comes down to individual characteristics of the LEDs. Some are made to fit specific buttons, some are made to retrofit various buttons, and so on...
