What kind of games could I get on this original hardware. Xbox360 would be awesome, impossible to interface with the original hardware? Anyone? BadMouth? :)

If you have the ability to assemble your own circuit board, this is the way to go for the controls (it only works on sega model 1 and model 2 systems):

Everyone who has it done that way is extremely happy with the results and it doesn't require you to re-invent the dashboard.
A majority of people who hack the happ wheels used in other cabs can't get them tuned to their liking.
If you can get the monitors working, then you really don't have to change much on them aside from adding a credit button.
If you can't get the monitors working, pick up cheap or free 27-29" TVs from craigslist.

Also realized that I didn't answer your original question about interfacing with an xbox 360.
It would be possible with a pad hack and swapping out potentiometers in the cab.
No wheel ffb though. (shaker motors could easily be done)
FFB in the wheel would be possible if you hacked an xbox wheel, but you'd be the first.
The huge downside to that is that there are no PC drivers for xbox wheels.
I think they work, but the ffb won't work on a PC.
The old cheap logitech PS2 wheels work well on PS2, PS3, and PC.
