Yoke Controller cabinet - any help or advice appreciated

I picked up an Apache arcade game from a Storage unit buyout.  I figured i could use the parts from the Yoke controller as spares for my dedicated Star Wars.  When i got it home, i plugged it in and it worked!  Works perfectly, however after playing the game for 10 minutes i realized this game is not fun.  So, i thought i might like to convert it to a Return of the Jedi, but then i found out that board is pretty rare.  Now, i would like to build a mame box that runs only games that would be compatible with the Yoke and the arcade monitor.  Any advice or comments?
