Mounting PC in Cocktail

I'm thinking of dust contamination inside that cabinet.

Well, dust accumulates very easily inside of a computer case when it sits on a desk... I'll handle this as I would any computer, when it builds up to a point, blow the dust out...

What you do is really going to depend on the style of cocktail you are using and the amount of clearance you have in there. The most important things are to mount it in such a way that you aren't going to end up damaging it later, and to make sure it isn't going to overheat (which can be a problem with cocktails).
