Quail Egg ideas

Halloween is in a few weeks...

So I decided to make Pho Ga and add these quail eggs as part of the dish.  I did boil them but did not crack and reboil with tea; it's a weeknight after all.  But I'll send a pic of the finished product.  My wife and kid thought ir disgusting, but I thought it would work very well with the Pho Ga.  I'll take a few pics just for fun and see where it heads.
I'm actually adding barbequed duck to my Pho, so it's kinds a Pho Duck (don't know the word for duck).  Yeah, not authentic but certainly tasty.

Here's the finished soup, complete with quail eggs.  I like them more than chicken eggs.  Creamier and richer.  Glad I tried them out.  Next time I'll do the tea thing.

Last year I bought some preserved black duck eggs for a Halloween spread.  They were boxed and wrapped in cellophane and sitting in the market unrefrigerated.  There were several brands.

They were the most disgusting thing I had all year.  They smelled the part, too.  These quail eggs have nothing on those suckers.
