You should probably try using a PC not a laptop as you will have problems driving the second screen with a laptop. With the PC you can add the required graphics card if you do not already have 2 screen support. If the PC is 1.8 GHZ P4 it will probably be a bit slow on some of the more complicated tables in FP. If it is dual proc then you are probably OK. You can always turn the graphic detail in FP way down to get the more complicated tables to run. I like buttons with LEDs for a pin as they add bling without alot of cost if you wire the power direct and don't use a driver board.
Overall you should be able to get it made for your under 500 dollar target.
