I don't think I could a Burger with Chili. Ground beef overload. I do make a really mean burger though. I don't really follow any recipe, but I can lay out what I make. These guys are not healthy, but damn delicious....just the way a burger should be. For purposes of titling them, I guess I'll call them....
Vigo's Magical Burgers:
* First grab 1 pound of lean beef, it makes 2-4 burgers. Mix in teriyaki sauce, soy sauce and sesame oil. I don't measure, but the ingredients are at about a 3:2:1 ratio to each other. The meat should be saturated, but not drippy. Toss in about a teaspoon of garlic powder and a teaspoon of ground pepper. The soy sauce is salty enough, so no salt needed.
* Now grab some delicious cheese and make into small slices. Mozzarella or chedder work great, and I recommend spending the extra money on some high grade cheese that will taste like magic velvet when melted. Grab about 1/3 to 1/2 pound beef, and throw a few slices inside the middle of the beef and compact the burger tightly. Oh yeah, we're going Juicy Lucy Style! 8)
* Now grill those up, sear first at high heat, then lower down the temp to get the inside since these are huge burgers. Now fry or grill up some bacon (the maple kind, yeah) and drain all the grease as you cook. Less greasy = more crispy. Also, some sauteed onions or onion rings as toppings do amazing good.
* When your burgers are almost done, toss more cheese on top, If you really want to get crazy with the cheese, grill the cheese on a well oiled pan for about 20 seconds and flip. This part is an art; you want your cheese to be browned and melty for fromage perfection.
* Not any buns will do, get big old kaiser rolls. Slap butter all over the inside of the bun and grill the insides for a few minutes. Now throw everything together; the burger, the bun, the external cheese, the onions or onion rings. Now grab some bbq sauce and put it on your burger as well, I am currently using Jack Daniel's Hickory Brown Sugar BBQ sauce. You can also sub BBQ sauce with pulled pork.
Be careful on that first bite, burgers with boiling cheese inside must be eaten with caution. Also, bison makes for great burger meat as well, if you can get a hold of some. Trust me, its amazing. ;)
