I hope you get a pinout for the HAPP P360's for easy connection, but you only need to attach a wire to the +5V on it then a GND and the direction wires. Hopefully you will get some kind of wire harness along with it.

Sorry, all my panels are metal, so I have no experience mounting sticks in wood.

I really like Seimitsu buttons, but I'm not sure that the screw-in type has a long enough body/plunger to be mounted in your plywood. They are very silent even though they're microswitch buttons.

You can mount the sanwa sticks in plywood, just top mount them. As for the buttons, order some 20 gram micros from paradise arcade or done soft touch micros
