Thats the plan. I currently have put together a pretty complete set of NES, SNES, Genesis, Master system, and GBA roms. (I kept English and English translated roms, removed alternate versions. These def. fit in under 10 gb. I am also going to put in a select set of C64 roms. As far as Mame, I am going to probably only put in about 50-100 of my favorites that I wouldn't mind playing on a console. If I still have enough room after that. I will see about throwing in more. :)

You might think about going with something like PuppyLinux for the OS, since it can be made to be ridiculously small:

The whole OS+Emulators comes down to like 109 megs, and boots embarrassingly fast.
