Best software to encode DVDs?

I'm add going to add a few a movies to my cab, yes I know a cab shouldn't have movies.
Anywho, I used dvdencryptor to rip a dvd, how can I convert it to an AVI? I think it's called encoding software.. not sure.

I was just going through the same thing as was tipped off to try DVDFab ..... friggin' does an awesome job. Lots of options to play with.
Another is ImTOO DVD Ripper, but I have only played with it a little bit. Result size was smaller, but I was having quality issues on the couple I tried. YMMV

I tried autogk. It gives you an option of how well you want the quality to be preserved. I put 100% and i could definitely tell the quality was not so great. My resolution is set to 1920 x 1200 so it's really easy to notice the quality downgrade. Someone suggested just making ISOs but man do those take up a lot of room.
Do you know if there is anyway to make an ISO or movie file that preserves dvd quality but gets rid of extras? maybe that will decrease the size.

I use http://sourceforge.net/projects/megui/ but I don't do .ISO files, only .mkv ones.
