Most kits and prebuilt cabs use black melamine on particle board as it is one of the most cost effective materials.

In the US melamine coatings are almost exclusively applied to particle board.  As previous posters have mentioned you need the right tools / blades for good cuts on particle board.  Another problem is assembling the finished pieces.  Standard woodworking adhesives will not give the best results on melamine.   Also consider the destructive effects of water on particle board.   You also asked about laminate.  Laminate thickness depends on the type.  From thinest to thickest the types are Vertical grade, Post forming grade and Horizontal grade.    If the laminate you are considering is an in stock item at a home store (Lowes, Home Depot, etc.)  it will almost certainly be the thickest type.  Vertical grade for the vertical sides of your cabinet would be more than adequate.   If I wanted laminate I would contact a custom counter top / cabinet business.   Ask them to order a sheet or two of vertical grade in your desired color with their next order.  They will also probably have more color samples.
