I think you're mis-understanding how some of these things work.

Arcade pcb setting - number of coins PER credit
Video Credit Board - can actually have a number of different functions, including adding and calculating multiple coin types per credit.
Coin Mech - determines what TYPE of coins are physically accepted.

The guy dropping coins 10 times or whatever was more than likely him just "testing" his new settings.

Is your credit board something like this -
